Randy's Tuna Salad
 

This is a simple recipe for a great sandwich that has evolved over the years.

Open 5 Cans of Tuna (in spring water)

Place Tuna in a strainer - press all liquid out of tuna.

Put tuna in a large mixing bowl and flake with a fork.

Chop 1 medium Vidalia (if possible) or any sweet onion.
Purple or Red Onions are attractive in this recipe.

Chop 2 medium sweet gherkins (or any sweet pickle) finely.

Chop 2 full stalks on celery (inside celery preferred) finely.

Add above chopped items to tuna.

Add enough Miracle Whip to taste - We like a pretty good bit.

Salt & Pepper to taste.

Add two shakes of wine vinegar

Stir gently until fully mixed.

For full flavor, place in a glass bowl and cover tightly, in refrigerator over night.

I know what you are thinking, "what about the eggs". I don't use eggs in mine for two reasons. #1 taste - they don't add anything to this simple recipe. #2 It shortens the shelf life considerably. From a week or more to 2 days. You know and I know that you can add them if you are led too. Go ahead...do it your way.
