Patty O'Malley's Baked Potato Salad
 
 
3         lbs red potatoes baked (about 45 minutes till tender) and diced
1         8 oz bottle Ranch dressing
1         tablespoon yellow mustard
1         red bell pepper diced
6         green onions chopped
16 oz   grated cheddar cheese, divided
4         strips bacon fried and crumbled
 
    Cook potatoes and set aside to cool. 
    Combine next 5 items using half of the cheese. 
    Toss in potatoes and spread in a 9 x 13' pan or glass dish. 
    Sprinkle with remaining chees and bacon. 
    Best  if  prepared ahead and chilled.
