Randy's Tuna Salad
 

This is a simple recipe for a great sandwich that has evolved over the years.
Miss Sherryl Hayes also makes a "mean" chicken salad and I would gladly
post it here if she would send it to me and approve the posting.

Smoke on your grill, three beautiful, large, inspirational Chicken Breasts

Smoke chicken breasts slowly and season with salt, pepper & garlic powder.

When done, remove from the grill, set aside and let cool.

De-bone the chicken breasts, discard the skin, chop chicken and flake.

Place chopped chicken in a large mixing bowl.

Chop 1 medium Vidalia (if possible) or any sweet onion.
Purple or Red Onions are attractive in this recipe.

Chop 2 medium sweet gherkins (or any sweet pickle) finely.

Chop 2 full stalks on celery (inside celery preferred) finely.

Add above chopped items to chicken.

Add enough Miracle Whip to taste - We like a pretty good bit.

Salt & Pepper to taste.

Stir gently until fully mixed.

For full flavor, place in a glass bowl and cover tightly, in refrigerator over night.
